• Observed cold holding equipment (reach in cooler) incapable of maintaining potentially hazardous food at proper temperatures. Ambient air recorded at 50 degrees F. Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures. C/A: PIC stated manufacturer is scheduled to check reach in cooler. New Violation.
• Observed raw chicken in meat prep sink improperly thawing without running water. time/temperature control for safety food shall be thawed: Under refrigeration that maintains the food temperature at 41°F (5°C) or less, completely submerged under running water, or part of the cooking process. COS: PIC turned on running water with sufficient velocity. Corrected On-Site. New Violation.

• Upon arrival observed fish thawing in stagnant water in vacuum sealed bag. Advised PIC to removed fish from manufacturing packaging when thawing. Also, advised that fish be thawed under running water. COS- fish was removed and relocated to walk in cooler. Corrected On-Site. New Violation.
• Observed fish thawing at vegetable sink. Advised PIC that vegetable sink is use to wash fruits and vegetables. The vegetable sink can also, be used to cool ready to eat foods. COS- vegetable sink was cleaned and sanitized. Corrected On-Site. New Violation.
