• During the time of the inspection, there were no paper towels readily available at the hand sink. Paper towels must be available at all times. Paper towels were immediately provided from another location.
• During the time of the inspection, multiple food items were being stored in the walk in cooler that were not covered. Advised PIC that all food items must be covered when they are not in use. Items were covered; corrected on site.
• During the time of the inspection, observed buildup in the interior of the ice machine. Advised PIC that the ice machine must be cleaned frequently enough to prevent the buildup of contaminants.
• Observed dish machine chlorine sanitizer not at proper minimum strength (0 ppm). CA: Dish machine must be repaired. Chlorine sanitizer must be between 50 and 100 parts per million. Must use three compartment sink only until dish machine is repaired.
• During the time of the inspection, observed wiping cloths stored on food contact surfaces. Advised PIC that wiping cloths must be stored in a sanitizer bucket between uses.
• During the time of the inspection, the previous inspection report was not posted. Advised PIC that the previous inspection report and facility permit must be posted in clear view near the front door of the facility at all times.
• During the time of the inspection, observed buildup of debris on the shelving in all of the cold holding units. Advised PIC that these shelves must be cleaned frequently enough to prevent the buildup of possible contaminants.
• Remarks: dishwasher was still not operational during the time of the inspection. 3 Compartment Sink is being utilized until fixed; sanitizing compartment was at 200 PPM during the time of the inspection.
