The setup for these foods was not adequate for controlling the temperature of these foods. Too much warm air from the kitchen was interfacing with the product. 2. Excessive food accumulation at floors in corners of the entire prep areas (makeline, salad prep station, fryer stations, breading station) and underneath all of the equipment in these areas. Due to the cleaning methods throughout the shift for the floors, food debris is pushed further underneath equipment and toward the baseboards/coving. Complete thorough cleaning at night with water hose and squeegee to remove all of the food build-up from the flooring. (Note: On recent pest control service ticket (5/20/2013), technician advised to make sure the excess food debris is cleaned from the flooring.) The floors, walls, and ceilings of the facility must be receive thorough cleaning frequently enough to prevent accumulation of debris. Β New Violation.
