ICYMI: China House Fails Inspection

How did your favorite Cherokee County restaurants perform on their recent food service inspections?

  • Upon arrival, there was no person designated as Person-in-Charge (PIC). There must be a PIC designated at all times. PIC arrived after 15 minutes.
  • There is an overall lack of food safety management in facility and an overall lack of knowledge. PIC is also the Certified Food Safety Manager and is responsible for ensuring that food is held at proper temperatures; that foods prepared in establishment are date marked; that employees are informed of symptoms/illnesses requiring reporting; that food equipment is properly cleaned and sanitized; and that thermometers are available to check food temperatures. PIC must ensure that responsibilities are being met.
  • The CFSM is not ensuring that employee preparing and handling food are properly trained in food safety. Employees cannot answer basic questions related to food safety or their duties. CFSM must ensure employees are properly trained. Recommend that one additional food employee be trained as a CFSM who can communicate knowledge to other employees handling/preparing foods.
  • Observed employee preparing raw shrimp and then move to cook area to prepare a to-go order of fries without washing his hands. Employee was interrupted and was asked to wash his hands and also dispose of to-go container. Employee complied with request. Employees must wash hands when changing tasks such as this. PIC must re-train employees on proper hand washing practices.
  • There is lacking knowledge of symptoms and illnesses requiring reporting and also lacking knowledge of restriction/exclusion of sick employees. PIC has not informed employees of reportable symptoms/illnesses and employees have not signed agreement to report. Guides will be provided in multiple languages by this office. Employee health policy and agreement to report are required.
  • Observed open employee drink above prep table. Drink was discarded. Observed employee food items on counters. Food items were discarded.
  • Hand sink in front storage/drink service area is blocked by a large desk. Hand sink in sole restroom is not connected. Move desk to allow access to hand sink in front area. The restroom hand sink must be working within 24 hours. Dine-in service is suspended until permission is granted by this office to re-open dining room. Employees and customers must have access to restroom hand sink for proper personal hygiene.
  • There is no protocol for cleaning/disinfecting in case of illness event in restaurant. This office will provide guidance for this.
  • Observed many items stored in the walk-in cooler not properly covered (noodles, raw chicken, cooked chicken). All food items in storage must be stored with a covering (plastic wrap, proper lids, foil).
  • Observed several in-use cooking utensils (tongs, knives, spatulas) stored in-between dirty, greasy kitchen equipment (between wok/stove top; between prep top cooler and steam table) and these utensils were also heavily soiled with grease/food. Spatulas were stored on top of a heavily soiled shelf that had a thick layer of dirt/dust/debris. Utensils were taken to dish area for cleaning/sanitizing. Utensils in contact with time/temperature control for safety foods must be cleaned/sanitized every 4 hours.
  • Observed many TCS food items not being held at proper cold holding temperature (41°F or below). There were several containers of cooked chicken at 46-48°F; noodles at 46°F; pork egg rolls at 46°F. The ambient temperature of the walk-in was 50°F. All out of temperature TCS foods were discarded and denatured with bleach. A technician was called to come to the facility to fix walk-in cooler. All TCS foods being cold held must be kept at 41°F or below.
  • Several pans of cooked chicken in walk-in cooler prepared days before not marked with preparation/discard date. Items were discarded due to temperature. Items prepared in establishment must be date marked and used within 7 days.
  • Facility has no thermometers for measuring food temperatures. Ensure thermometers are available and employees are trained to use them.
  • Equipment in kitchen (many items) are in poor overall condition and in need or replacement or repair.
  • Observed shrimp being washed in 3-compartment sink and sink was not cleaned/sanitized after shrimp was removed. Sink must be cleaned and sanitized before and after using to thaw/prep raw meats.
  • There are excessive, thick layers of grease, dirt, dust, and food grime on equipment in kitchen. This is unacceptable and must be addressed immediately.
  • Suspension of liquid cleaner/chemical (neon green) residue being dumped onto parking lot and down bank toward detention pond behind facility. This must stop immediately.
  • There are excessive/thick layers of grease, dirt, dust, and food grime on walls. This is unacceptable and must be cleaned immediately.
  • Damage to walls in kitchen is very severe. Follow plan outlined on previous visit to correct these issues.
  • Remarks: Continue following directives/corrective actions given on 10-10-18 (during visit in response to complaint of construction of sushi bar) for repairs/corrections to equipment and replacement of walls, back door, and addition of mop sink.
  • A follow-up inspection will be held Dec. 13.
