• Observed a water jug in the hand washing sink. COS by removing the water jug. Hand washing sink must always be accessible and used only for hand washing.
• Observed improper vertical separation of raw animal foods and ready-to-eat foods. Observed raw animal foods not properly separated from each other in holding unit/during preparation. Observed eggs and vegetables stored below raw chicken. COS by rearranging the foods based on the final cook temperatures.
• Observed ice bin left uncovered. COS by closing the lid.
• Cooked potentially hazardous food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Observed chicken wings cooked from previous night not cooled to 41 with in 6 hours. The temperature of the wings is 58, 51, 52, etc. COS by discarding the wings. I explained about the cooling process.
• Observed some of the foods prepared on site not date marked. Must write the dates and use with in 7 days from the day of preparation. COS by discarding.
• Observed containers of soap stored on the shelf above the water station - the shelf has water jugs and lemon wedges. COS by storing the soap in a designated area away from the food and food contact surfaces.
• Observed food such as onions and other vegetables stored on floor. All the food and the containers must be stored 6" off the floor.
• Must clean the gaskets and doors of the coolers.
• Observed live flies in kitchen.
• A follow-up inspection is scheduled for Oct. 19.
