Restaurant Inspections: 67, Or U, For Casey's Home Cooking

The Cherokee County Environmental Health Department conducted food service inspections Oct. 3-10 at the following establishments:

• Observed general lack of hand washing among employees when changing tasks(handling soiled and clean dishware, moving between front and back food service areas/different food types). Staff needs to be trained on proper hand washing practices and the Person-in-Charge (PIC) must ensure these practices are followed.
• Heavy buildup inside can opener blade housing and on blade; black residue on blade of food chopper; encrusted food buildup on skillet (electric); dried food residue on vegetable peeler; chef knives in storage with encrusted food residue. Some items discarded, others taken to dish area for cleaning/sanitizing. PIC must ensure food equipment is cleaned and sanitized thoroughly.
• Walk-in cooler not maintaining temperature of 41°F. Time/Temp Control food items at 45-47°F. Some items discarded and some relocated. Door to walk-in freezer was opened to assist with temperature. PIC instructed to have unit serviced and make necessary repairs for proper function (unit has had multiple service calls). Potato salad, macaroni salad on cold buffet at 46-47°F. Items discarded. Ensure cold Time/Temp Control items are held at 41°F or use proper time control system (discussed).
• Time system is not being used correctly for items on hot buffet. Items are not being discarded at end of 4-hour holding time. This was discussed with PIC and PIC took appropriate action to discard expired items. System must be used correctly or not at all.
• Many pieces of equipment are broken(shelves, legs for equipment, etc..). These items must be repaired or replaced. Door of walk-in freezer is rusted out of its hinges and not longer closes; cooler gaskets are also damaged on this unit. This must be repaired.
• Shelving in walk-in cooler has fuzzy mold due to buildup of spilled food that has not been cleaned. Wooden shelf in walk-in has black mildew/mold. Remove this shelf from cooler. Heavy dust buildup on fan covers in walk-in an on box fan used to dry dishware. Clean and maintain equipment.
• Dumpster lids are missing. Dumpster must be replaced.
• Bulk grease bins are overflowing onto ground resulting in a public nuisance and rodent/insect attractant. This must be cleaned immediately.
• Floor tiles missing in several areas; low grout in several areas allowing water to accumulate; walls behind equipment in need of thorough cleaning. Hand sink loose from wall must be re-attached.
• Back door has gaps around door and does not close properly. This must be repaired.
• No followup date for a re-inspection was provided on the form.
