Shoney's (Food Service Inspections)*

View inspections: October 22, 2018 Score: 81, Grade: B
- Must keep soda guns and holsters at bar clean. Food choppers stored as clean with food particles still present. Keep can opener clean and free of accumulations. Keep CO2 lockbox locked.
- All potentially hazardous foods must be cold held at 41 degrees F or less.
- Must label all bulk storage as to contents.
- Do not use dented cans. They must be sorted and not used.
- Must post CFSM certification and choking poster in patron area.
- All scoops must have handles. Do not store knives in between equipment.
- Do not wet stack containers.
- Do not store knives on magnetic knife rack. Must be stored covered/protected. Store plates, bowls, etc covered/protected.
- Invert/cover single service articles. Store toothpicks, etc with food contact portion down.
- Keep fan covers in walk-in coolers clean. Replace several cooler door gaskets.
