Local Bolingbrook Couple Transforms Old Portillo's to Jazz Hot Spot

Owners said their vision is to "create a special place for music, laughter and fun…a place similar to our home."

After nearly a year of searching for a location and building with the perfect ambiance for a new jazz hot spot, owners Lawrence and Samantha Cooper debuted , newest restaurant and jazz bar.

Located in the old Portillo's building at 148 N. Boughton Road, Coop’s Den was introduced to the communities of the western suburbs to fulfill a community demand for a neighborhood gathering place committed to the desires and values of a more mature crowd.

“Bolingbrook hasn’t had an establishment that specifically caters to the dining and entertainment needs and wants of the adult suburban residents,” said owner Lawrence Cooper. “Our goal is to create and maintain a modern and exciting dining and late night party experience for this particular demographic.”

Coop’s Den will feature entertainment evenings that include live musicians, including jazz and soul bands and specialty music such as house and step.

By the hands of Filipino chef Homer Reyes, Coop’s Den offers American Fusion cuisine that the owners said is sure to satisfy the diverse palettes of Coop’s guests.

“Our vision was to create a special place for music, laughter and fun…a place similar to our home,“ said owner Samantha Cooper. “We wanted a place where people can come eat, drink, and have a good time.”

Coop’s Den is open from 11:00 a.m. to midnight Monday through Thursday, and 11:00 a.m. to 2 a.m. Saturday and Sunday. After 9 p.m. only ages 25 and older.
