Blaze Pizza Hoping to Open on Sherman

Serving pizza in 8 minutes or less, the pizzeria has two Chicago locations.

The Blaze Pizza chain is hoping to open an Evanston restaurant at 1737 Sherman Avenue.

Blaze, which has 250 shops around the world including two in Chicago, serves thin crust, made-to-order pizza in eight minutes or less, according to city documents.

The 1,800-square-foot space would have 38 seats and may apply for a sidewalk café in the future, the documents say.

The owner described the serving style as similar to Chipotle, where customers walk along a counter and choose their pizza ingredients from among the 40 toppings available, the documents say. Wine and beer would make up only 1-2 percent of sales.

The proposal received unanimous support from the city’s Site Plan and Appearance Review Committee, though the ultimate decision will be made by the Evanston City Council.
