Hewn Bakery Opens On Dempster June 4
A new bakery selling artisan breads, pastries, espresso and salads opens for business at 810 Dempster St. in Evanston.

Fresh baked breads, flatbreads, challah, croissants and morning buns are coming to Dempster Street next week, when Hewn Bakery opens for business.
Located at 810 Dempster St., the bakery will also offer coffee, espresso and vegetable salads, and officially opens at 7 a.m. Tuesday, June 4.

Business partners Julie Matthei and Ellen King say their focus will be on rustic breads and pastries baked in a giant hearth stone oven. King, who attended culinary school in Seattle, handles the baking, while Matthei handles the business side of the operation.
“The reason that the name is Hewn is because Hewn means to cut or shape by chopping or by hand,” Matthei told Patch in March. “And that’s really how Ellen makes her bread.”
