Bartoli’s Pizza Opens With Classic Recipe, Décor
After discovering a lack of good pizza in his Roscoe Village neighborhood, Brian Tondryk decided to open his own restaurant.
When Brian Tondryk opened Bartoli’s Pizza at 1955 W. Addison St. Monday, he opened with his family’s original recipe.
Tondryk’s grandfather, Fred Bartoli, started the first Gino’s East Pizza, which now has more than 10 locations. Wanting a return to the roots of deep dish, Tondryk built his own pizza joint featuring a small menu with fresh ingredients.
“There are too many deep dish chains that take shortcuts with frozen food,” he said. “My goal is to create the deep dish pizza I ate as a kid.”

Tondryk lives in Roscoe Village and said the neighborhood suffered from a lack of good pizza—until now that is.

After acquiring the space in December, he did a major overhaul of the restaurant that used to house Carreno’s Pizza.

For now, Bartoli’s is only serving dinner, but Tondryk hopes to open at 11 a.m. for lunch after hiring more pizza cooks. The restaurant will close at 11 p.m. during the week, 1 a.m. on Friday and Saturday and 10 p.m. Sunday.
