'Kneading' A New Location, Hewn Bread Shifts Plans For Winnetka Shop

The artisanal bakery has found a new Hubbard Woods home in the site of a shuttered e-bike shop.

WINNETKA, IL — The planned third location of Evanston-based Hewn Bread has changed, but the renowned artisanal bakery is still slated to open in Winnetka this fall.

When previous plans to open up in the former coin shop at 964½ Green Bay Road had to be adjusted, co-owners Ellen King and Julie Matthei found a new location about a block down the road in the village's Hubbard Woods district at 894 Green Bay Road.

The new location was previously occupied by a Pedego electric bicycle dealer, which opened in the fall of 2020 and closed after less than three years. It is nearly 400 square feet larger than the former coin shop.

Hewn has racked up an array of accolades since opening its first location on Dempster Street in 2013. It moved to its present location at 1733 Central St. in 2020.

In 2021, Hewn was named among the "absolute best bakeries in Chicago" by Thrillist, and Food & Wine Magazine dubbed it the best bread in Illinois and the "region's most inspiring bread" in 2022.

Last year, Hewn opened its first satellite retail location at 348 N. Milwaukee Ave. in Libertyville, though all baking is done at the Evanston headquarters.

"The Evanston location has a very large back kitchen where everything is baked early every morning," King told Patch last month, "and it has always been the plan to open outposts in different communities and have all the production be done at the Evanston location."
