Dietitian Abbey LeBoeuf Expands Campus Nutrition Outreach

Abbey LeBoeuf, MS, RD, LDN, CNSC, District Campus Dietitian for Sodexo, is expanding her reach across North Louisiana and Mississippi, bringing hands-on nutrition education and expert guidance to students at seven campuses.

LeBoeuf’s outreach now includes Northwestern State University, Centenary College, and Grambling State University in Louisiana, as well as Jones College, East Mississippi Community College (EMCC) at two campuses, and the Mississippi University for Women (MUW). Through interactive events, she is engaging students in discussions about healthy eating while providing personalized support for their dietary goals.

One of the key events, Mindful Mocktails, introduced 471 students across all campuses to two water-based mocktails while emphasizing the importance of hydration. LeBoeuf used the opportunity to introduce herself, letting students know she is available for nutrition and food-related questions. Many students expressed interest in meeting with her to discuss their personal nutrition goals.

At Jones College, she hosted a Team Talk for 220 student-athletes, covering the fundamentals of sports nutrition. The session included the rollout of Dietitian’s Pick, a retail feature highlighting dietitian-approved items for student-athletes. To reinforce key takeaways, students participated in a trivia challenge, with winners receiving items from the Dietitian’s Pick collection.

In North Louisiana, an Overnight Oats event engaged 180 students, offering them the opportunity to build their own heart-healthy oatmeal bowls with toppings such as fresh fruit, honey, nuts, seeds, and dark chocolate chips. LeBoeuf discussed heart health benefits of oatmeal while also promoting other heart-healthy options available in campus stores.

With her expansion into North Louisiana and Mississippi, LeBoeuf is making nutrition more accessible for students, offering expert advice and engaging programs designed to encourage lifelong healthy habits. More campus-based nutrition initiatives are planned for the coming months.
