Warm Heavy Cream; No Certified Food Manager: Critical Violations
Montgomery County health inspectors cited two Silver Spring food establishments for failing to keep food at the proper temperature.
SILVER SPRING, MD — Inspectors from the Montgomery County Department of Health and Human Services noted critical violations at two Silver Spring food establishments during recent inspection. Both were holding food at the wrong temperatures and a one did not have a certified food manager present for the inspection.
All Montgomery County licensed retail food establishments are inspected by the Licensure & Regulatory Services Program. Regular comprehensive inspections include evaluating an establishment's sanitation, maintenance and food service operations. These inspections include monitoring critical temperatures and food handling procedures.
"A Critical Violation means a food safety requirement that requires immediate correction," according to the health and human services website. "Failure for immediate correction results in cessation of some or all food operations or closure of the facility until violation is able to be corrected."

Harina Bakery
On Sept. 18, an HHS inspector conducted a re-inspection of the Harina Bakery located at 11929 Georgia Ave. in Silver Spring. The re-inspection was to see if the walk-ins and prep cookers had been repaired.
Although the prep cooler had been repaired and was maintaining a temperature of 35 degrees Fahrenheit, the walk-in cooler was not repaired, according to the report. The temperature in the walk-in was 43 F instead of the required 41 F.

"Potentially hazardous food, heavy cream observed at 43'F in the walk-in cooler," the inspector wrote in their report. "The walk-in thermometer is not operational."
29 Convenience Mart
Food was was not being prepared when the HHS inspector visited the 29 Convenience Mart located at 10755 Colesville Road in Silver Spring on Sept. 9.
The inspector noted that cheese and a milk dispenser were being kept and 45F rather than the required 40F.
In addition, a certified food service manager was not present during the inspection and there was no food allergen awareness trained person on duty. The market will have to provide both within two weeks.
