Potbelly Sandwich Shop Opening Today

The grand opening of the sandwich shop is today.

The new Potbelly Sandwich Shop is set to open it's doors in the Wayside Plaza, located at 2 Wayside Road, today. 

The new restaurant is located in the former Fresh City location.

Ian Goldstein is the general manager and has been with Potbelly since January of 2005, where he most recently held the position of general manager at the downtown Milwaukee location, a release from the restaurant states.

"I am excited to be bringing the unique Potbelly experience to Burlington," he said. "I have met and connected with many of the people in this area and am thrilled to bring a new place for the neighbors to eat and have a fun time. It’s also exciting to introduce the Potbelly culture to the many businesses in the neighborhood." 

The new shop partnered with People Helping People during its pre-opening event on Monday, the release states. A "soft opening" was held on Monday with funds going towards the community organization.

"We chose to partner with a great nonprofit organization, People Helping People," said Goldstein. "They provide an amazing service for this community and people who need a hand."

On Saturday, April 27, the restaurant will have an opening event with live music, musicians and food, Goldstein told Patch last week.

This is the first Potbelly Sandwich Shop to open in Burlington and the new shop will staff nearly 20 employees and managers. The location is open every day from 11 a.m. to 9 p.m. The shop will offer delivery to the Burlington area shortly after its opening.

According to the Potbelly Sandwich Shop website, the Chicago-based company began in 1977 as a small antique store run by a nice young couple who decided to boost their sales by selling sandwiches. The sandwich shop, with quick service, offers a variety of hot and cold sandwich options made from fresh cut meats and vegetables. The store also offers cookies, milk shakes, soups and salads.

Potbelly is not the only restaurant slated to open in Wayside this summer. As reported on Burlington Patch, Season's 52 is set to open this summer in the old Borders location at 6 Wayside Road.

According to the Season's 52 website, the higher-end restaurant offers a variety of seasonally-inspired menu options. Entrees include Cedar Plank Atlantic Salmon, Caramelized Sea Scallops, Garlic Chicken Flatbread, Roasted Crab-Stuffed Shrimp, Ripe Plum Tomato Flatbread, Grilled Rack of New Zealand Lamb and the Char Crust Filet Mignon.
