This is a delicious and exotic sweet potato recipe that does not use butter, sugar or marshmallows.
Roasted Sweet Potatoes with a Kick

* four cups of sweet potatoes, peeled and cubed
* 1/2 cup coconut milk
* 2 Tbs. olive oil
* 1 Tbs. cumin
* dash of salt and pepper
* 2 Tbs. red pepper flakes
Preheat oven to 420 degrees.
Mix coconut and oil and add sweet potatoes. Roll sweet potatoes in red pepper flakes. Spread on baking sheet. Salt and pepper lightly. Cook for 20 minutes, rotating pan after 10 minutes. Broil for two minutes to add a bit of crunch.
