Vermont-Based The Skinny Pancake To Open At Peabody's Northshore Mall
The Skinny Pancake was founded as a food cart in Burlington, Vermont in 2003.

PEABODY, MA — A Vermont-based fast-casual restaurant featuring breakfast, lunch, dinner and dessert is set to open at the Northshore Mall next month as the first mall location of The Skinny Pancake.
"We've had our sights set on Boston for years, but entering this market is no small feat," said Benjy Adler, CEO and Founder of The Skinny Pancake. "Northshore Mall provides us with a prime, destination location where we can stand out. Once we establish ourselves here, we look forward to expanding further across the region."

Founded as a street cart in Burlington, Vermont in 2003, The Skinny Pancake's Peabody location will include a large patio near the food court, a run of glass garage doors, an exterior entrance and an open kitchen where patrons can watch the restaurant's crepes being made in real-time.

The location will be open seven days a week and will have a full alcohol menu of craft beers, brunch cocktails, espresso drinks and milkshakes to go along with the food offerings.

Owners said that with the opening of the Peabody location, The Skinny Pancake expects to increase the amount of locally sourced ingredients they purchase not just from Vermont farms and food producers such as Maplebrook Farms and Cabot, but also from New Hampshire, Massachusetts, and Maine seacoasts.
