Recipe: Savory Homemade Vegetable Soup

Are you looking for a tasty soup that can please everyone's palate? This recipe is delicious, nutritious, easy to make and only takes a little over an hour to cook. You can find all of the ingredients you need at most grocery stores, including .

Here's what you'll need:

  • 8 cups (2 large containers) vegetable stock
  • 2 cups fresh green beans
  • 2 ears of corn (cut from cob)
  • 3 leeks, sliced (white parts only)
  • 5 or 6 cloves of garlic, minced
  • 3 potatoes, peeled and diced
  • 2 large carrots, peeled and chopped
  • 6 large tomatoes (peeled, seeded and chopped)
  • olive oil
  • salt and pepper
  • bread (for dipping)

In a large stockpot, heat up 3-4 tablespoons of olive oil over medium heat. Add the minced garlic and leeks; cook until leeks begin to soften (5-10 minutes).

Add potatoes, carrots and green beans to the pot and cook, stirring occasionally, for another five minutes or so.

Pour in the broth and heat on high until it begins to simmer. Add the tomatoes and corn. Bring back to a simmer, cover; reduce to low heat and simmer for about half an hour, or until the vegetables are tender.

Add salt and pepper to taste; serve with a hearty bread for mopping up the delicious broth. Serves 6-8.
