We'll start with knife skills, including the basic knives you need (it's fewer than you think), how to sharpen them, and how to use them. You'll learn classic cooking techniques by preparing simple, delicious meals, and enjoy them with your classmates.

We'll make dishes like Spinach & Mushroom Salad, Corn Chowder, Beef Bourguignon, Maple-Mustard Pork with Apples, Chicken with Tarragon Sauce, "Company" Potatoes, Skillet Carrots with Fresh Sage, and some simple desserts. Each dish is carefully chosen to illustrate a particular cooking technique and lay the foundation for future kitchen successes.

Please note that if you took Great Simple Meal in the spring, this class will reinforce many of the techniques you learned, but all the dishes we prepare will be different.

The instructor is Elizabeth Skipper, an accomplished personal chef and culinary teacher, of The Everyday Epicure in Amherst. www.TheEverydayEpicure.com
