New Eatery Sets 'Pretty Solid' Opening Date

Flatbread Pizza Company co-owner John Meehan joked that it's almost become a serial drama at this point due to various surprise delays, although the official opening for the restaurant's new Hampton location is now past the speculative stage.

Meehan said Hampton Flatbread is set to open to the public on Thursday, Feb. 7 — a date in which he said he's more confident than all of his previous estimates.

"It's pretty solid," said Meehan. "It's all we talk about every day. Over last four to five days we’ve been feeling like this is definitely going to happen, of course, barring any inspection issues.

"We're pretty confident."

Unforeseen state and/or local inspection issues are the only thing stopping Meehan from labeling Feb. 7 as a "guarantee." He said, though, that Flatbread has "mapped out every day" between now and Feb. 7 and will move forward with a plan to open either Feb. 7 or on a date during the subsequent weekend (Friday, Feb. 8, to Sunday, Feb. 10) because the building will be ready to go.

Meehan said only a few things still need to be done at the High Street restaurant, the largest of which being the completion and hanging of some of the main artwork for the dining space.

All major construction, fixtures and machinery must be completed and installed before inspections can take place, which means the Hampton Flatbread "looks like it could open in a couple days" right now, according to Meehan.

"It looks really cool now," he said.
