The GTK concept, first honed in Jersey City, came to Hoboken in May with a new store on the main drag of Washington Street. The idea is that you can try cuisine from various types of "ghost truck kitchens" at once.
You can order everything from tumeric coconut rice to what they say are the healthiest wings on the East Coast (charbroiled with various sauces) to a Bahn Yu vegan sandwich to a Greek faro salad. The menu is extensive, with unique desserts as well.

The Gyro Project, Fort Lee
Restaurateurs George Tenedios and Spiro Kokkosis, who live in Bergen County, are gearing up to premiere a new Greek dining concept that they want to be "everyone's go-to spot for lunch and dinner."
The Gyro Project will open soon at 2151 Lemoine Ave. in Fort Lee.
The restaurant will be fast casual, but also serve delicious and wholesome, customizable food to eat in or take out, they said.
"Customers will be able to order a feta-brined rotisserie chicken and select fresh, in-house sides (the Greek favorites) ... it is a project," a restaurant spokesperson told Patch.
They'll also have desserts like Greek frozen yogurt and varieties of Greek doughnuts.
The eatery will also have a Green marketplace or agora for imported Greek items.

Kevin Trimachi's company, TriState Restaurant Group, already owns several eateries in Central Jersey: 22 West Tap & Grill in Bridgewater, Oink and Moo BBQ Market in Holmdel and Somerville, and Even More Epic Cookies in Somerville.
Recently, a small space in Somerville opened up for him when Epic Cookies merged with Even More Epic Cookies at 84 W Main St.
On May 13, he opened Slingin' Dogs in the slim spot at 92 W Main St. in Somerville.
"What I always like to do when I open a place in Somerville is to see what's not here or really around. And there is no hot dog places in Somerville," Trimachi told Patch.
So how does a successful entrepreneur do hot dogs?
For now, the pick-up window offers a few varieties including chili cheese dogs and the Jersey-famous Italian dog. Find out more here or at slingindogs.com.
Artie's Restaurant, Maplewood
The popular Italian eatery Arturo's in Maplewood recently announced that it will move to new location and join forces with a bread bakery. It will reopen as Artie's this coming Monday, June 5.
For many years, Arturo's featured gourmet wood-fired pizzas. They said they'll merge with a bakery called The Bread Stand.
Among their offerings, they recently showed off their "asparagus, spring onions, leeks and whipped burrata" pizza.
Now you'll be able to get eats like that, along with fresh-baked bread, at 15 Newark Way.
"We’ll have a small and simple bar program that will grow at a pace that we’re able to manage. There’s more — the restaurant and the Bread Stand will become one, under one roof," they said on social media. Find out more here.
Maize Cocktails & Cucina, Westfield
