New Restaurant Blending Sustainable Cuisine With Artistic Design To Open At Princeton Art Museum
The restaurant will open to the public on Nov. 1.
PRINCETON, NJ - This fall, Princeton University Art Museum will debut Mosaic Restaurant, a new dining destination developed in partnership with Restaurant Associates.
Opening to the public on Nov. 1, Mosaic will blend art, sustainability, and culinary excellence.
The museum café is a full-service restaurant. Mosaic's design ensures the restaurant feels inseparable from the Museum. Drawing inspiration from the museum's terrazzo flooring, mosaic tilework, and stained-glass art collection, the space features carefully chosen colors, textures, and lighting that create a warm, inviting atmosphere.

The terrazzo-inspired branding further connects the restaurant to its artistic home, making it an extension of the galleries rather than a separate entity.
Tables are set with handmade tableware from Jono Pandolfi's Union City workshop, ensuring each place setting is unique. Diners will use David Mellor's Embassy cutlery, originally designed for British embassies to showcase modern design.

Custom cobalt-blue water pitchers from Remark Glass, a woman-owned Philadelphia studio, transform recycled Saratoga bottles into functional works of art.
The debut brunch menu showcases seasonal ingredients through creative dishes including Honeynut Squash Soup topped with Snapdragon Salsa and Tahini, Shakshuka with poached egg and charred bread, and an inventive "BLT" featuring Bacon & Pickled Golden Raisin Terrine. Sweet options include a Cinnamon Bun with roasted apples and chai, and a Crepe Cake with orange mascarpone and cranberry curd.
The beverage offering is a partnership between Princeton's Small World Coffee. They have produced a signature Mosaic Blend combining beans from Indonesia, Africa, and Central America, served in Bodum Chambord French presses.
The tea program features selections from Hadong, Korea through Leef NYC and Tea Master Claire Lee, alongside global blends from Palais des Thés, presented in elegant Kinto and glass filter pots that elevate tea service to ceremonial status.
Mosaic will operate Monday, Thursday, and Friday from 9 a.m. to 3 p.m., and Saturday through Sunday from 10 a.m. to 3 p.m. The restaurant offers table service, takeaway, catering, and upcoming ticketed events connecting art, culture, and cuisine.
