Mauryas At Princeton Forrestal Village Offers An Elevated Fine Dining Experience
The restaurant offers healthy Indian and American cuisine with a focus on authentic cooking methods and fresh produce.
SOUTH BRUNSWICK, NJ – Spread across 10,000 square feet at the Princeton Forrestal Village, just off Route 1 South, is the brand new restaurant - The Mauryas Bar and Lounge.
The restaurant serves Indian and New American cuisine to cater to different customers and palates. And that’s what sets it apart from other restaurants in the area.
“We often have customers who come in groups and while some prefer American cuisine, others favor Indian. Our restaurant offers both in a stylish and comfortable setting,” a spokesperson from the restaurant said.

Opened in April, most of the restaurant's customers are employees of companies in the area. As such, they cater to various clientele with varied tastes.
“All our food is plated and made from produce that comes from local farms. We serve healthy food while retaining traditional flavors and cooking techniques,” the spokesperson said.

The Mauryas offers an elevated dining experience. A look at the menu showcases a curated list of dishes that are traditional to Indian and American cuisine.
The New American menu includes fried calamari, crab cakes, filet mignon, pan-seared duck with port poached pear, lamb chops in a ginger mint marinade and truffled ravioli.
The Indian menu has classic Indian dishes cooked in traditional methods and served with a twist.
The beetroot galouti kebabs is a vegetarian take on the famous Lucknowi galouti kebabs. The habanero chicken tikka is cooked in the traditional clay method but with a marinade of yogurt and habanero pesto.
The traditional dahi ke kebab is essentially a pan-seared yogurt patty but served with a raw mango relish.
In the main course there’s the famous butter chicken, but served with tri-color new potatoes – it has a sweet, creamy, and buttery taste that packs a punch with spices. Meanwhile, the clay-baked red snapper is an ode to traditional marinated Indian-style fish but served whole with sauteed leeks and apples.
“No other restaurant is doing what we are doing. Our focus is on healthy food cooked with authentic methods. We have so many customers who can tell the difference and know what’s being served. They keep coming back,”restaurant management said.
The name Mauryas pays tribute to the great Indian Mauryan Empire which was formed around 321 B.C.E and encompassed most of the Indian subcontinent. The food during that time focused around seasonal local produce that was healthy and economically beneficial.
While choosing the location for the new venture, Princeton Forrestal Village proved to be the best choice.
Although located in Plainsboro, the restaurant has a Princeton address. Forrestal Village is a 720,000-square-foot, 52-acre retail and office complex that has The Westin, Ruth’s Chris Steak House, Salt Creek Grille, Bon Appetit Café among other businesses.
“It’s a very quiet neighborhood. We always wanted a location where people can have a nice meal. Plus the farms where we get our produce are located nearby,” the spokesperson said. The restaurant also has a 50-person corporate lounge that is yet to open. Entry to this lounge will be on membership only and an opening date has not been decided yet.
“At Mauryas we foster an environment of dignity and respect among employees and customers. Our employees are as important to us as our customers as they form the backbone of our restaurant,” restaurant management said.
The restaurant has indoor and outdoor seating . They are open for Lunch Mon-Sat: 11 a.m.– 2 p.m. and for dinner Sun – Thu: 4 p.m.– 9 p.m. and Fri-Sat 4 p.m. – 10 p.m.
The bar hours are Mon-Sat 11 a.m. - 11 p.m. and Sunday 11 a.m. - 11 p.m.
