NY Vegans Have A Variety of New Options With 'Meatless Mondays'
A new project at the Essex Market is targeting vegan palates and challenging chefs to create meatless options in their native cuisines.
NEW YORK CITY —Beginning Oct. 4, vegans will have new options to choose from as the Essex Market launches "Meatless Mondays."
Vendors throughout the hall have banded together to focus on alternatives to beef, poultry and chicken with a day dedicated to highlighting the tastiest vegan options in the market. Accordingly, every Monday one member of the Essex Market Vendors Association will offer a dish created especially for vegan palates.
Participating in the project is Diana Edelman, the founder of Vegans, Baby, "a business dedicated to making vegan life easier and vegan dining more approachable," according to its website.

As Edelman explained on the site, "When I decided to expand Vegans, Baby to New York City, my goal was to continue curating and creating events and showing restaurants the value of adding vegan dishes to menus. This partnership is an exciting first step towards my goal of making vegan options more abundant and working with organizations and restaurants to become leaders in the plant-based movement.”

The project begins today with Mille Nonne, Essex Market's Italian stall. There, chef Pilar Rigon is serving up two options: One is a dish of mushrooms marinated with fresh herbs, ginger and balsamic vinegar, and that will be paired with roasted butternut squash, arugula and quinoa (gluten-free) or garlic bread. The dish is also available as a sandwich.
