CORNucopia Recipe: Corn Salad

A perfect recipe to enjoy while the seasons get ready to change.

Editor Krista Madsen took home a simple recipe for corn salad from the event. Take advantage of this end-of-summer staple before the leaves start changing!

So simple, fresh and bright:

Cook a few ears of corn—boil, steam or grill.

Cut the kernels off when cool.

Mix in big bowl with:
Mango chunks
Some diced red onion
Red, orange or yellow diced bell pepper
Black beans
Halved cherry tomatoes or fresh diced tomatoes
chopped fresh cilantro 
chopped cucumber

Toss with olive oil, juice of one lemon, salt and pepper
