West Islip's newest eatery, Roots Bistro Gourmand, opened its doors earlier this week. The cozy bistro, which replaces on Montauk Highway, serves up French cuisine with a modern flare. Co-owners Philippe Corbet and James Orlandi make their way to West Islip from in St. James, where they served as chefs. At Roots, they take over as executive chef and general manager, respectively.
