Ken's Famous Sausage, Broccoli, and Rice Skillet

Quick and easy skillet dinner.

Ingredients:

2 - 4 oz links of DiRusso's medium hot Italian sausage

2 - cloves crushed garlic

2 - tablespoons olive or canola oil

1 - medium red pepper thinly sliced

1 - medium onion thinly sliced

1 - 12 oz Giant Eagle steam-in-bag broccoli

1/2 cup low sodium chicken broth

1/2 cup tomato sauce

salt to taste

2 cups instant Minute rice

3/4 cup Giant Eagle Parmesan and Romano blend shredded cheese

1 - cup grape tomatoes sliced lengthwise

Instructions:

In a 12 inch non-stick skillet cook the sausage links over medium low heat rotating often until just cooked enough so that you can slice the links on the diagonal into 1/4 inch slices easily.

Add oil to skillet, turn up the heat to medium high. After the oil is shimmering add the sausage slices and cook until browned on all sides.

While the sausage is cooking microwave the broccoli for 3 minutes only, even though the package says to cook for 5 minutes.

While the sausage is cooking cook the rice according to package directions.

In the last minute of cooking the sausage add the garlic being careful not to burn the garlic.

Once the sausage is browned add the peppers, onion, broccoli, broth and tomato sauce.

Raise the heat and bring to a boil. Once a boil is reached reduce the heat and simmer until the peppers have softened.

Add the tomatoes and cook for an additional 2 minutes only.

Add as much cooked rice as the skillet will accommodate.

Stirring well add salt to taste.

Sprinkle with the cheese and cover until the cheese is melted.

Serve once the cheese is melted.
