Recipe of the Week: 'Super Pasta'
The editor of the Baldwin-Whitehall Patch shares his own recipe!

I like to eat.
So, one night, when my wife—yes, Mrs. B-W Patch—cooked up some whole wheat pasta with chicken, spinach and feta, I thought, "What else could we put in this?!"
A quick raid of the pantry and freezer that night turned a good meal into a great one, and ever since, the Mrs. and I have added things to what is now known as, simply, "super pasta."

Ingredients:
- Whole wheat pasta (any kind that you'd like)
- Chicken breast
- Spinach leaves
- Feta
- Mushroom pieces
- Artichoke hearts
- Frozen peas
- Sun-dried tomatoes
- Pine nuts
Instructions:
- Cut the chicken breast into strips and cook in a pan with canola oil until they're no longer pink.
- At the same time, boil water in a pot. Then, cook the pasta in that pot with a bit of canola oil.
- In the same pan the chicken is in, add the mushroom pieces, artichoke hearts, frozen (but thawed)Â peas and sun-dried tomatoes, and when they're all warm/hot enough to eat, add the spinach leaves and cover with a glass lid. (Keep the oil from the artichokes and tomatoes containers in the mix order to create a "sauce" for your pasta)
- Once the spinach shrivels down, take as much pasta as you'd like from the pot and cover it with as many toppings from the pan as you want.
- Sprinkle feta and pine nuts on top of your pasta.
- Add hot sauce if you wish.
- Invite me to dinner.
