Recipe of the Week: Easy Portobello Mushroom Burgers

Here's a simple and healthy dinner for any night of the week!

I am a huge fan of portobello mushrooms. They're delicious, healthy and easy to cook!

Earlier this week, I made a simple portobello burger that could be perfect for one of your busier days. Here it is!

What you need:

Portobello mushroom cap

Garlic salt

Pepper

Olive oil

Shredded mozzarella cheese

Hamburger bun

What you do:

Preheat the oven to 400 degrees. In a small pan or cookie sheet, spread olive oil lightly to prevent sticking. Cut the stem off of the mushroom and lightly shake pepper and garlic salt on the bottom to taste. Place the mushroom on the pan and season the top to your liking. Bake for 8 minutes.

Remove from the oven, add shredded cheese and bake for another eight minutes. I added a little bit of light ranch dressing on top before placing it on the bun. A side salad is great with this low-calorie yet filling 'shroom burger.
