Recipe of the Week: Gelatin Cake

A great summer recipe!

This is a great summer recipe! And you can make it red, white and blue for the summer holidays!

It comes from my mom, who found it on the Kraft food website at www.kraftrecipes.com.

Gelatin Cake

What you need:

1 two-layer white cake mix

1 cup boiling water

1- 3 ounce package of jello strawberry flavored (I used sugar free to slim it down)

1/2 cup cold water

1 tub (8 ounces) cool (I used fat free to slim it down) 

Prepare cake according to instructions on box and use a 13X9 pan to make it in.

Cool cake for 15 minutes in pan. Pierce the cake with a large fork at 1/2 inch intervals. Add boiling water to jello and stir 2 minutes until completely dissolved.

Stir in cold water, pour over cake and refrigerate for three hours. Frost cake with cool whip and refrigerate one hour.

Optional---top with strawberries and blue berries for a festive topping---you can also arrange blue berries and strawberries to make a US flag for a fun July 4th dessert!
