Recipe of the Week: Turkey Meatloaf Minis
Here's a healthy variation on an all-American classic.

Last week, I discovered a new favorite recipe to add to my kitchen with Mini Meatloaf! I found this recipe in the "Eat What You Love" cookbook by Marlene Koch. I made a couple changes to make it even healthier and the result was absolutely delicious.Â
What you need:
1 pound lean ground turkey

2/3 cup quick cooking rolled oats
1/2 cup chopped onions

1 large egg
2 tablespoons low fat milk
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons ketchup
1 teaspoon mustard
1 teaspoon molasses
What you do:
Preheat oven to 425 degrees. Spray six muffin cups with cooking spray. In a large bowl, mix all of the ingredients excluding the ketchup, mustard and molasses and knead with your hands. Divide into six balls and place in muffin pan. Press and arrange balls to form to muffin cup, but do not pack it in.
In a small bowl, whisk together ketchup, mustard and molasses. Spoon the glaze over each mini meatloaf.
Bake uncovered for 20 to 25 minutes or until cooked through. Let stand for five minutes.
