Quakertown Neighbor's Game Day Snack Recipe: Corn Beef Special Salad
This mixture of coleslaw, Thousand Island dressing and Swiss cheese will leave you salivating.
QUAKERTOWN, PA — If you plan it right, the snacks at your football watch party on Feb. 11 will be as much discussed as the key plays. When we asked Quakertown readers to submit their MVP-worthy recipes, Debby Sokol Kooker submitted this recipe:
Corn Beef Special Salad
- #1 coleslaw( diced if you can find) Ron's works well
- Half a bottle of Thousand Island dressing
- 1/2-pound Swiss cheese diced in about 1/2-inch pieces
- #1 of corn beef diced the same size as the cheese
- Rye toast or rye bread cut into halves
- Mix all ingredients, except toast or bread, mix about 2 hours before ready to serve, Yummy!
