The sautĂ© unit had an ambient temp of 50 degrees. The gaskets on the drawers are in poor repair. These gaskets must be replaced. All food had be placed in unit earlier in the day, food was moved to walk in and brought back to temp. Unit can not be used until gaskets are replaced and unit is holding proper temps. The pre-flush spray hose at the dishwasher is hanging below the flood rim. A plumbing system shall be installed to prevent backflow of a liquid or gas contaminant into the water supply by providing an air gap or installing an approved backflow prevention device.
