Arkos Mojo Grill & Martini Bar Opens at Shoppes at Flight Deck
The restaurant features "Latin-fusion" food and a special martini list.
A restaurant and bar serving up "Latin-fusion" cuisine and "martinis with a vengeance" is now open at the Shoppes at Flight Deck.Â
Arkos Mojo Grill & Martini Bar opened April 4 next to Tonella's Bistro.Â
Owner Jon Stambolitis created a dinner menu that features dishes like Puerco Relleno, pork tenderloin stuffed with granny smith apple salsa and spicy chorizo sausage, and Carne con Chimichurri, a sirloin flap encrusted in crushed peppercorn and topped with chimichurri sauce.Â

About 93 percent of the food is prepared in house, Stambolitis said, including the gaucamole, which is served as an appetizer and along with some of the main dishes.
The restaurant also has a martini list featuring drink recipes Stambolitis created himself. The drinks are made using high-quality alcohol.Â

The list feature nine drinks right now, but Stambolitis hopes to expand.Â
"The drink menu is just going to keep growing," he said.
He also plans to unveil a lunch menu next week.Â
Stambolitis, a third-generation restauranteur and graduate of the University of South Carolina, is the son of Ted Stambolitis, owner of Flight Deck Restaurant.
He opened Arkos in hopes of bringing a upper-scale restaurant with a Las Vegas-type feel to the Lexington area.Â
"Lexington really needs something like this," Stambolitis said. "There have been nice restaurants, but they've come and gone."Â
Arkos is open for for dinner from 4:30 to 10 p.m. Tuesday through Friday and from 4:30 to 11 p.m. Saturday. The bar stays open until 2 a.m. Thursday and Friday and until 12 a.m. Saturday.Â
Starting Tuesday, April 23, Arkos will be open for lunch from 11 a.m. to 2:30 p.m. Tuesday through Saturday.Â
