29 Violations Found At Eatery: Manassas Restaurant Inspections
Health inspectors found foods that may not be from an approved source, mold in the ice machine and more violations during August.
MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between Sept. 1 and 23.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Manassas and western Prince William County area, according to the Prince William Health District. There were as many as 29 violations, which were reported at Naz Halal Food. Inspectors found numerous violations regarding hand washing, certified food protection manager certification, and properly washing, rinsing and sanitizing equipment. Corrective actions were discussed with the manager.

- Throughout there was notice of various violations pertaining to hand washing, certified food protection manager certification, and properly wash, rinsing and sanitizing equipment.
- The person in charge shall ensure that:
- Employees are effectively cleaning their hands, by routinely monitoring the employees' handwashing
- Employees are visibly observing foods as they are received to determine that they are from approved sources, delivered at the required temperatures, protected from contamination, unadulterated, and accurately presented, by routinely monitoring the employees' observations and periodically evaluating foods upon their receipt
- Employees are verifying that foods delivered to the food establishment during non-operating hours are from approved sources and are placed into appropriate storage locations such that they are maintained at the required temperatures, protected from contamination, unadulterated, and accurately presented
- Employees are using proper methods to rapidly cool time/temperature control for safety food that is not held hot or is not for consumption within four hours, through daily oversight of the employees' routine monitoring of food temperatures during cooling.
- Employees are properly sanitizing cleaned multiuse equipment and utensils before they are reused, through routine monitoring of solution temperature and exposure time for hot water sanitizing, and chemical concentration, pH, temperature, and exposure time for chemical sanitizing.
- There was no verifiable training of employees reporting diagnoses, illnesses or living with person with diagnoses and illness directly associated with foodborne illness.
- An employee was observed drinking from a bottle with the same gloves used for cooking and preparing food.
- An employee donned gloves before washing hands to engage with food prep.
- There was an employee observed washing hands at the prep sink.
- Green sauce without label to verify source of food item.
- Several employees were not changing their gloves in between tasks, such as working in the front area then coming to prepare orders.
- The single use cup that was being used as a scoop was stored laying down in the container of cucumber and tomato salad.
- In the walk in cooler there was raw fish stored on the shelf above uncut, prewashed tomatoes stored on the floor next to the shelving unit.
- The food thermometer was not properly cleaned/sanitized.
- The person in charge was unaware how to properly wash, rinse and sanitize food contact equipment.
- The process of reheating nacho cheese was being done in a hot holding unit, temp at 69F after being inside for an 1.5 hour.
- There was container of cucumbers and sliced tomatoes that were prepared at 8am, that were temp at 45F, and there was a container of cut lettuce that was prepared at 8am temp at 46F in the walk in cooler, that was covered with lids. The temperatures for each were taken around the 4hr mark.
- There were several toxic chemicals that were stored on the same shelf or above food and or food ingredients.
- There were several containers of chemicals, and unknown liquids in secondary bottles that did not display the name of the product/toxin inside.
- In the 2 door prep unit top portion in the cook area there was container of cucumber and tomato mix also cut lettuce was cooling from 8am.
- At the start of the inspection there was several gyro cones that were sitting out at room temperature on the shelving unit in the dry area thawing. Also on another shelf there was raw hamburgers that were thawing in the dry storage area.
- During the inspection it was determined that only 1 food thin probe thermometer was being used throughout the facility to take food temperatures.
- There were multiple containers of food/ingredients that were not labeled with the name of the ingredient/food item inside.
- Several containers of green sauce did not bare labels to properly identify the source, ingredients or manufacture of the product.
- An employee was observed working with food without a proper hair restraint on.
- There was food containers that were stacked on top of each other without them being properly dried before stacking.
- Cardboard was being used as a means to keep food contact surfaces clean by lining the top of the surface to prevent properly cleaning of equipment to take place.
- The hand sink was no longer properly sealed to the adjacent wall, caulking was cracked and or missing.
- The facility did not have 3 stoppers to properly wash, rinse and sanitize equipment.
- Inside the 1 door upright freezer shelves they were dirty and not clean to the sight or touch. Also in the chest freezer there was build up of ice.
- Mops were not hung once they were done/not in use.
- Employees were storing their personal belongings in the dry storage area.
