Up To 14 Violations At 1 Place: Vienna Restaurant Inspections

Violations such as debris in an ice machine and residential pesticides in an eatery were found during recent health inspections in Vienna.

VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.

The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.

Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on reports in June around the Town of Vienna. Of note, Bear Branch Tavern had 14 violations, including debris inside an ice machine.

Frame Cafe: 302 Maple Ave, Vienna, Va 22180

Violations:

  • Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: Observed raw shell eggs and smoked salmon on middle racks of 2DR upright cooler, with ready-to-eat foods stored below.
  • Pesticides labeled for residential use (Sure Shot Fly Killer) were observed in the facility and are being applied by the operator to control pests.
  • Restricted, commercial use pesticides present in the facility are applied by the operator who is not a certified pesticide applicator. During conservation with the owner, it was discovered that ownership is applying commercial pesticides without a pesticide applicator license.
Bear Branch Tavern: 133 Maple Ave, Ste# 100, Vienna, Va 22180

Violations:

  • After discussion with PIC, observed partially cooked chicken wings in a non continuous cooking process.
  • Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: Observed raw chicken stored over RTE pretzel bread inside of Continental 1dr UP cooler at end of cookline. Observed raw shelled eggs stored above RTE cherry tomatoes and RTE pickles inside of walk in cooler in kitchen area.
  • After discussion with PIC, observed partially cooked chicken wings in a non continuous cooking process.
  • The food-contact surfaces of the following equipment were not observed sanitized: Observed one in use bar chemical (chlorine) dishmachine not meeting concentration of 50-200ppm.
  • The date when the last shellstock from the container is sold or served is not recorded on the tag or label. Observed no date for last batch of oysters sold on some shellstock tags on file.
  • Observed no covered feminine napkin refuse container in the unisex employee restroom in basement.
  • Observed multiple plastic and metal pan were found stacked while wet after cleaning and chemical sanitization on shelf above 3 compartment.
  • The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: Observed aluminum foil lining on cookline above stove burners. Observed cardboard lining dry storage shelves in food preparation area.
  • Observed interior of ice machine with debris in kitchen area.
  • Clean equipment and utensils such as large pots and whisks were observed stored improperly.
  • Observed multiple boxes of food stored on the floor inside of WIF. Observed boxes of food stored directly on floor in employee locker area.
  • Observed that the floor grout along several areas of the kitchen are not maintained in good repair. Observed ceiling tiles in need of sealing at the end of the cookline and above ice machine in dry storage area.
  • Employees observed wearing jewelry on their arms and hands while preparing food. Observed multiple employees wearing watches and bracelets on cookline while preparing food.
  • Observed plastic bowls stored directly in bulk food items: sugar and rice. Observed multiple in use utensils stored in containers of standing water with temperatures less than 135F along the cookline. Standing water temperatures in containers ranged from 74F- 97F.

Pazzo Pomodoro: 118 Branch Rd, Vienna, Va 22180

Violations:

  • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Observed uncooked shrimp (45F) and uncooked swordfish (47F) inside of 4 drawer cooler (left side).
  • Raw animal food storage, preparation, holding or display conducted in a manner that may cause cross contamination of ready-to-eat food as follows: Observed uncooked burger patty stored directly over uncooked spinach inside 2 dr preptop cooler on cookline. Observed raw shelled eggs stored directly over uncooked spinach.
  • A record keeping system is not in place to maintain the tags of used/sold shellstock in chronological order correlated to the date that is recorded on the tag/label. Observed shellstock tags for shelled clams and mussels are not in chronological order to the date that is recorded on the tag/ label.
  • Observed debris on the interior of ice machine in kitchen. Observed encrusted debris on steam wand at the espresso machine in the bar area.
  • The following food items that are not easily identified by appearance were observed without a label: Observed squeeze bottles (balsamic vinegar, oil, chocolate sauce, etc) on cook line without common food label. Observed bulk food (sugar, panko, flour) containers unlabeled with common food name in prep area.
  • Observed floors in disrepair in the back kitchen area.

Aditi Gourmet Indian Flavors: 405 Maple Ave, Vienna, Va 22180

Last inspection: June 27

Violations:

  • Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled 'Employee Health Policy.' Observed no employee health policy in place at time of inspection.
  • Observed the certified food manager could not provide a food temperature measuring device.
  • The food establishment does not have written procedures for employees to follow when responding to vomiting or diarrheal events. Observed written vomiting and diarrheal event cleanup procedures not available.
  • The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: Observed multiple food items (cooked spinach, cooked lamb, cooked white rice, cooked fish) stored inside of WIC for more than 24 hours without date marked preparation of discard by date.
  • The following refrigerated, ready-to-eat, time/temperature control for safety food that is prepared on site is not used or discarded within 24 hours of preparation and was not observed to be date marked: Observed multiple food items (cooked spinach, cooked lamb, cooked white rice, cooked fish) stored inside of WIC for more than 24 hours without date marked preparation of discard by date.
  • Observed plastic food containers wet stacked on shelf behind the 3 compartment sink.
  • Observed hole in wall in kitchen area.
  • The following food items that are not easily identified by appearance were observed without a label: Observed multiple seasoning containers (salt, sugar), squirt bottles (sauces and oil), and bulk food (sugar, flour) containers unlabeled with common food name throughout kitchen area.

Westwood Country Club Snack Bar: 800 Maple Ave, Vienna, Va 22180

Last inspection: June 3

Violations:

  • The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: cooked chicken wings in #3 (46F), vanilla soft serve in VEVOR (51F).
  • The following methods used for cooling were not adequate to facilitate proper cooling: deep container of chopped TCS fruit and deep container of cooked chicken wings cooling in refrigeration units.
  • The following equipment is not operating properly and/or is in poor repair: the vanilla soft serve ice cream in VEVOR ice cream machine (51F). The machine was not maintaining the ice cream at the appropriate temperature.
