Excess Flies On Trap, Debris In Ice Machine: Vienna Restaurant Inspections
August inspections by health inspectors found violations like a bug light lamp over clean equipment, unclean ice machine interior and more.
VIENNA, VA — As the Fairfax County Health Department regularly inspects restaurants in the Town of Vienna, we continue to look at the latest inspection results.
The health department's environmental health staff inspect over 5,200 restaurants and other retail food service establishments in Fairfax County and cities of Falls Church and Fairfax to ensure safe food handling practices are followed. This includes proper sanitation, food storage and preparation, and adequate kitchen facilities. Aside from restaurants, staff inspect child care centers, hospitals, school cafeterias, and temporary food service vendors at festivals.
Residents can search for a specific restaurant or browse a map of inspected locations through the online database. The health department cautions residents that multiple inspection reports should be used to evaluate a restaurant rather than a single report.

This week's report focuses on reports in August around the Town of Vienna. Some violations included debris in ice machines at Vienna Thai and Bar, Foster's Grille and Westwood Country Club, a bug light lamp stored over clean kitchen equipment where bugs could fall, and "excessive" dead flies on a fly trap at Caffe Amouri.

- Open drinking containers used or stored in a manner that may contaminate food, food contact surfaces or utensils. Observed an employee’s water in an open drinking container stored on top of the food prep table.
- Dispensing and/or in-use utensils improperly stored between use as follows: observed utensils used for boba stored in water.
- Observed the following food thawing using an improper method: turkey breast and imitation crab thawing at room temperature at three compartment sink.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.
- Observed that clean cloth gloves were stored in a manner that exposed the item to contamination. Observed cloth gloves drying on the side of the handwashing sink.
- The following food items that are not easily identified by appearance were observed without a label: squeeze bottle containing oil, spray bottle containing water.
- Single-service piping bags were observed being washed and hung to dry.
- The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: Observed plastic wrap roll used for food contact was mounted on a wooden core.
- Observed that mops are improperly stored between use. Observed mop head stored head down in the mop sink.
Vocelli Pizza: 334 Maple Ave, Vienna, Va 22180

- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: ALFREDO SAUCE=47F, MEATBALL=50F.
- Observed that hand soap was not provided at ware washing g. Station’s handwashing sink.
- Corrective Action: Provide hand soap at each hand sink to allow employees to properly wash their hands.
- Observed that paper towels were not provided at WARE WASHING STATION’S handwashing sink.
- Observed that the hand washing sink located at the 3-compartment station, is in need of cleaning. Also, the freezer drain hose on the walk-in freezer, that is draining into the hand washing sink, should be be redirected to the floor drain for proper draining to prevent the contamination of the hand sink.
- The 4-door Pizza prep table refrigeration unit is not operating properly and is unable to maintain cold food at or below 41F at the bottom compartment.
- Milk /Soda crates found used as storage racks at the back work area.
Sushi Yama: 328 Maple Ave, Vienna, Va 22180

- Employees are not properly trained in food safety, including food allergy awareness, as it relates to their assigned duties regarding the proper operation of the 3-compartment sink. The sink was not set up too WASH, RINSE & SANITIZE, while the sink was in use.
- Poor handwashing procedures observed. An employee was observed washing his hand while he was still wearing gloves.
- Employees observed wearing jewelry on their arms and hands while preparing food, at the Sushi Bar station.
- The following food items that are not easily identified by appearance were observed without a label: A variety of sauces noted in squeeze bottles in the kitchen and at the sushi bar were not labeled to identify contents.
- Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the cutting boards after each use.

Westwood Country Club: 800 Maple Ave, Vienna, Va 22180

- The following fish offered for service or sale in the ready-to-eat form was not frozen to ensure parasite destruction: fresh tuna and salmon served cooked to order.
- The establishment does not have an approved HACCP plan for the food that is packaged using the Reduced Oxygen Packaging (ROP) process to vacuum packaging NY strip steaks onsite, freezing in walk in freezer, thawing, and using for more than 48 hours.
- Observed debris on the interior the ice machine in the upstairs kitchen and is not being cleaned as required.
- The following methods used for cooling were not adequate to facilitate proper cooling: diced tomatoes (51F cooling after 2 hours) inside top part of 2 Dr Drawer
- preptop refrigerator in the downstairs kitchen.
- The pressure gauge for the high temperature ware washing machine located in the downstairs kitchen was observed below 5 PSI or 30 PSI. Observed pressure was between 30- 35 PSI at time of inspection. water temperature in the manifold servicing the high temperature warewashing machine was below the minimum allowable level of 165F for a stationary rack single temperature machine.
- The following equipment is not operating properly and/or is in poor repair: Turbo Air 2 Dr preptop refrigerator (ambient temperature 47* at time of inspection, Avantico 1 Dr UP cooler ambient temperature 46* at time of inspection.
- The following equipment is not operating properly and/or is in poor repair: chlorine dishmachine in restaurant bar area is not properly dispensing chlorine sanitizer. Bar was not open and dish machine was not in use at the time of inspection.
