Glendale, WI – February 9, 2025 – This Valentine’s Day, Dr. Dawg is trading in counter service for candlelight as it transforms into a romantic pop-up bistro for one night only. Guests will enjoy table service, linen-draped tables, and a warm, intimate atmosphere—without giving up the bold flavors they love.

And to make the evening even more special, former Wisconsin Public Radio host and balladeer Ben Merens will be on hand, creating personalized love songs for each couple—a unique memory and romantic experience to cherish long after the meal.

And let’s be honest—nothing says ‘romance’ quite like a perfectly dressed Chicago dog or an Italian beef with extra giardiniera," says Brooke Thomson, owner of Dr. Dawg. "So this Valentine’s Day, we’re doing something special. For one night only, we’re transforming Dr. Dawg into an intimate pop-up bistro with candlelit tables, personal service, and a menu made for sharing. It’s a fun, unexpected way to celebrate—whether with a partner, a friend, or just someone who truly appreciates a great meal."

For Brooke, this event is more than just a fun idea—it’s personal. Her own love story began in the food and hospitality industry, where she and her husband, Brian, first met while working together at Rickettie’s in Chicago. Their shared passion for great food became the foundation of their life together—including their wedding, which they catered themselves.

Brooke has been part of Dr. Dawg for over a decade, playing a key role in its success before becoming the owner last year. Under her leadership, the restaurant continues to be a North Shore favorite, serving high-quality, all-natural Chicago-style hot dogs, Italian beef, and classic comfort food.

"And here’s the thing—tables are already filling up. This is a once-a-year event, and when the seats are gone, they’re gone," Thomson adds. "Whether you’re toasting to love or simply to a great Italian beef, we’re ready to make it a night to remember."
