Smith is a culinary graduate with more than 30 years of wide-ranging experience. According to Wauwatosa Plan Commission documents, Daddy's would be a "mini version of what has become the go-to place for cooking that your grandmother used to make, [and] will delight the many patrons that had depended upon the diner providing them with key meals throughout the day."

Under the Smiths' proposal, Daddy's would have all-day breakfast including smoked sausage, ham, salmon croquettes, grits, catfish, eggs in every way, pancakes, chicken and waffles, oatmeal and fruit among other items.
