New Pizzeria Brings NYC-Style Pizza To Beverly Hills

Lodge Bread Co. founders recently opened Full Proof Pizza - with a commitment to naturally leavened dough & option for pizza by the slice.

BEVERLY HILLS, CA — The two founders of Los Angeles-area Lodge Bread Co. — cafes and bakeries renown for “slow” bread crafted with whole grains — now are bringing that naturally leavened process and NYC-style to their new Full Proof Pizza on South Doheny Drive in Beverly Hills.

This is the second location for Full Proof, which sells its gourmet pizzas either as 12-inch, 18-inch or by the slice, along with salads and chicken wings. Offering takeout and delivery, the shop opened in a former Domino’s Pizza locale, officials said.

Another Full Proof is on Washington Boulevard in Culver City, and a third site is planned for 145 S. Barrington Ave. in Brentwood, the company said.

James-Beard recognized bakers Or Amsalam and Alex Phaneuf launched their Lodge Bread business "on a dare" in 2015, with a focus on “slow” bread, made with organically-grown, whole grains and the naturally leavened process that allows for wild fermentation.

Inspired by their bakery "pizza nights" at Lodge Bread, the duo now brings to Full Proof Pizza that naturally leavened method — using fully natural, sourdough yeast that yields a sturdy pizza with a crispy crust, according to Amsalam and Phaneuf.

"Alex and Or are obsessed with the age-old, bakery-born classic and would love to share their style with the city," management said.

On the Beverly Hills locale's pizza menu are such exotic choices as: potato & leek; prosciutto & shaved parm; pesto & sausage; spicy eggplant; wild mushroom; and classic Margherita.

Salads include an Italian chop salad and a vegan Caesar, along with wings tossed in sambal or BBQ sauce and served with house-made ranch

The Full Proof shop is at 371 South Doheny Drive. With an '80s' arcade vibe, the 1,100-square-foot location also offers a "Stranger Things" pinball machine to entertain patrons waiting for their pizzas. Follow this link for menu and ordering details.
