CSUSM Dining Services Welcomes New Executive Chef Trevor Chappell

Chappell brings more than two decades of culinary experience to the university's dining program

California State University San Marcos (CSUSM) Dining Services is pleased to announce the appointment of Trevor Chappell as its new executive chef. Chappell brings more than two decades of culinary experience to the university’s dining program, where he will oversee menu development for both catering and residential dining services. His first day will be March 3.

“We are thrilled to welcome Chef Trevor to CSUSM Dining Services,” said Paul Reardon, general manager. “His passion for food and extensive experience in both restaurant and catering settings make him an exceptional addition to our team.”

Chappell’s culinary journey began at Santa Barbara City College, where he earned a degree in culinary arts while gaining hands-on experience as a line cook. He went on to refine his skills at renowned establishments such as Jake’s Del Mar, North Italia, and Bouchon, eventually taking on leadership roles, including interim executive chef and executive chef at The Barrel Room. There, he played a pivotal role in opening two locations and expanding catering services.

In addition to his restaurant experience, Chappell founded Your Table, a personal chef and catering business specializing in fine dining experiences. Over four years, he crafted elegant, multi-course meals featuring dishes such as lobster gnocchi, coffee-crusted bison, and smoked salmon deviled eggs, further honing his expertise in creating high-quality dining experiences.

"I'm excited to work with new clientele and serve students delicious dishes," Chappell said. "Bringing fresh, innovative flavors to campus dining is something I’m truly passionate about."

In his new role at CSUSM, Chappell will work closely with General Manager Paul Reardon, Catering Manager Kevin Swanson, and Operations Manager Bernard West to elevate dining options across campus. His leadership will enhance the university’s culinary offerings, ensuring a dynamic and high-quality dining experience for students, faculty, and staff.
