🍱 MENU — All Gut-Friendly, Gluten-Free, Dairy-Free, Fermentation-Focused
1. Miso Soup with Traditional Awase Dashi: A soothing miso soup made with kombu & dried bonito flakes dashi, finished with spinach and mushrooms.
2. Dashi-Maki Tamago (Japanese Rolled Omelet): Fluffy rolled egg seasoned with dashi & koji seasonings, served with grated daikon and soy sauce koji.
3. Steamed Salt-Koji Salmon with Shiso: Tender, umami-rich salmon marinated in salt koji and gently steamed for maximum nutrition and flavor.
4. Steamed Haiga-Mai Rice (served, not cooked in class) : A nourishing, fiber-rich Japanese rice served alongside the meal.
5. Koji Amazake (served, not cooked in class) : A naturally sweet, fermented koji drink topped with optional matcha.
