There’s just something so classic about sausage and peppers with onions. Hearty, comforting, crowd-pleasing, simple and delicious, especially with the addition of earthy rosemary. But even classics could use reimagining once in a blue moon.

Top it all off with hot honey, and you’ve got a beautifully complex dish that comes together quickly, even on busy weeknights. The savory, roasty, umami flavors of the sausage, peppers and onions are at their best with a touch of sweetness and spice. Flavor party on your taste buds!
This recipe is a natural fit for a sheet pan recipe. Just throw in some potatoes and you’ve got protein, veggies and starch all in one.

Broiling this meal in the oven brings out a whole new level of flavor in the sausage, pepper and onions. The ultra-high heat not only makes everything (potatoes included) cook quickly, but the veggies get this caramelized, umami-ish vibe that is so cozy and delicious. (My mouth may or may not have started watering while I typed that. Don’t judge me, OK?)

This is great for chilly nights, but you can also summer-ify it by throwing in some corn, maybe some okra and tomatoes. Another idea: Omit the potatoes and serve the sausage, peppers and onions in a hot dog bun, with hot honey drizzled on top! Mmmmm…

If you’re not familiar with hot honey, I think you’ll like it regardless of your tolerance for spice. That’s because it is SO easy to customize it to whatever your tastes are. Traditionally, it’s equal parts honey and hot sauce. Give it a taste, and if that’s too much on you, simply add some more honey until you’re comfortable with the flavor. I promise, even the spice-averse people in my life will eat hot honey, with the hot sauce in small amounts!
