Fuego’s Father’s Day Bestows Brunches, Bourbons and Brophy Dale Trio

Fuego’s Father’s Day weekend bestows a bunch of brunch specialties at its waterfront location in Long Beach on Saturday, June 15 and Sunday, June 16 from 11 a.m. to 4 p.m., reservations required. Live entertainment from Brophy Dale Trio will perform both days from 11:30 a.m. to 3:30 p.m.

Father’s Day guests can also enjoy Fuego’s specialty Bourbon cocktails including “Classic Dad” made with whiskey, Mexican cola, lime juice and lime wedge; and “Papa Ta' Picoso” made with Blue Curacao, jalapeno infused tequila, lime juice, Tajin rim and lime wedge.

Fuego’s Father’s Day Weekend Brunch menu includes sharables, salads and breads like Shrimp Mercado, with chipotle tomato broth, pickled red onions, cucumber, avocado, jicama, scallions, and fried corn tortillas; and Mayan Burger, a half-pounder Angus patty with cheddar or Swiss cheese, lettuce, tomato, red onion and pickle; applewood smoked bacon and avocado is extra. The Kielbasa Smoked Sausage is a grilled Kielbasa sausage, whole grain mustard, and grilled onions on a Hoagie roll.

Father’s Day entrees include Pork Ribs with Jack Daniel’s barbeque sauce, steak potatoes, cole slaw, and jalapeño corn bread. The Grilled New York Steak is served with red chimichurri sauce, Gorgonzola cheese, tomatoes, steak potatoes, arugula salad, and fresh avocado. The Machaca and Eggs is scrambled eggs, braised shredded beef, Mozzarella cheese, ranchero sauce, avocado and breakfast roasted potatoes. And Fuego’s special Ropa Vieja is a Cuban-style braised short rib, black bean purée, crisp corn tortillas, pickled cabbage, caramelized plantains, and serrano cream.

Fuego Tacos offer four specialty taco choices including Al Pastor, slow-roasted pork shoulder, onion, cilantro, pineapple, and chile Morita.

Father’s Day features four desserts including Vanilla Créme Brulée with fresh berries and caramelized sugar; and Key Lime Tart with flakey pastry tart shell, creamy lemon curd and liquor scented cream.

In addition to the Father’s Day specialty Bourbon cocktails, dads can choose from a variety of Fuego signature cocktails including Chilcano De Pisco with Barsol Pisco, blood orange, ginger ale, simple syrup, lime and bitters; Spicy Watermelon Margarita with El Jimador tequila, mela watermelon, lemon, lime and tajin rim; El Macua Martini with Flor de Cano rum, guava, orange, lemon and simple syrup; Azteca Old Fashioned with Casamigos Reposado tequila, union mescal, agave, Aztec chocolate bitters and orange peel; and Fuego Margarita with El Jimador tequila, Cointreau, lime juice and agave nectar. A variety of red, white and sparkling wines are available, along with beer on tap with Modelo Negra and Lauginitas IPA, and a variety of Imported, Craft and Domestic Bottles.
