North Haven Couple Takes A Chance, Opens A Food Truck

North Haven's Krista and Craig McCarthy have taken a chance on their own business, The Spud Stud, a food truck they park primarily in Wallingford and Stamford.

The Record-Journal reports that the couple used to work in the bail bonds industry and owned a pawn shop, but decided to buy a food truck this year after seeing how popular they are in other states. The Spud Stud serves hotdogs and hamburgers, but specializes in gourmet baked potatoes, according to the truck's Facebook page.

The two mainly park the truck in Wallingford in the Metro Tools' parking lot and at the Stamford Beer Garden, according to the newspaper.
