Unique Simsbury Restaurant Shutters

The eatery opened in 2021 amid the challenges of the pandemic, though the owner said she is focusing on another restaurant venture.

SIMSBURY, CT — One of the town's more unique dining destinations has closed permanently after only about two years, but the owner says she's not done serving her hometown's cuisine.

According to a social media post last week, Roux — a cajun cuisine restaurant at 10 Wilcox St., Simsbury — closed with the owners' intentions to focus on another venture.

Stephanie Civitillo, the owner, hails from Louisianna, which is the centerpiece of the food she serves, which includes such southern classics as gumbo, shrimp and grits, jambalaya, and all sorts of other favorites of that region.

According to the posted announcement, Roux debated operating two such restaurants, but opted, instead, to operate one.

As a result, Simsbury closed and all of the owner's focus will be on the undisclosed new location.

"We debated and deliberated and did test runs to determine if we should have two locations or just one," reads the announcement. "In the end, it is the right decision for our business and our family to move to the new location and go all in."

Though the eatery opened in 2021 amid the chaos of the post-pandemic landscape, which wreaked havoc on the restaurant industry, Roux's owner said Simsbury will be missed.

"We love yall and will miss you," she wrote. "Thank you for all the wonderful memories and your continued support."
