Caledon Concepts Announces The Tampa Expansion of Ceviche Tapas Bar & Restaurant

Ceviche brings authentic Spanish flavors back to Tampa at International Plaza and Bay Street

Tampa, Florida (October 14, 2025) – Caledon Concepts, a boutique restaurant group that owns Ceviche Tapas Bar & Restaurant and the award-winning Rococo Steak in Downtown St. Petersburg, officially announced the 2026 summer opening of a new Ceviche location at Tampa’s International Plaza and Bay Street.

The new restaurant will occupy the former Alma Restaurant & Bar space and is poised to be a distinguished addition to Tampa Bay’s shopping and dining destination. This location will debut an elevated modern interior and exterior design, a large open bar area, indoor and outdoor patio seating, and direct access to an unparalleled offering of 170+ stores and restaurants.

Founded in 1997, Ceviche is the original tapas restaurant in the region. The menu will focus on bringing unique Iberian flavors from the kitchen to the table. Ceviche’s Executive Chef Horasio Salgado imports many authentic ingredients from Spain and ties family recipes to the tapas dishes. In addition to the refreshed menu, the wine list will feature an extensive selection, with a particular focus on Spanish and international wines. Ceviche has earned Wine Spectator’s Award of Excellence since 2022.

The Caledon Concepts team worked closely with restaurant and retail specialist Jim Sullivan of PB Realty. Jim represented Ceviche on the real estate leasing transaction, working directly with International Plaza leasing representative Dan Hayhoe of Taubman. Caledon Concepts also chose a local architect, Brian Wolfe of Wolfe Architect, a full-service firm that designs and creates innovative spaces that engage and inspire.
