ICYMI: Cherokee County Restaurant Inspections

Here are some recent food service inspections conducted by the Cherokee County Environmental Health Department:

View inspections: December 20, 2018 Score: 86, Grade: B

• All potentially hazardous foods must be cold held at 41 degrees F or less. Cut cabbage on counter at 54 degrees F. Placed in ice bath.
• Keep wipe cloths stored in sanitizing solution when not in use.
• Only wash veggies in veggie prep sink. Label veggie prep sink.
• Do not line shelving with cardboard.
• Must keep sanitizer test strips on hand.
• All ceiling tiles in kitchen must be smooth, non-absorbent and easily cleanable. Repair floor tiles at mop sink.

• There is not a health policy to exclude sick employees that includes reportable symptoms and/or illnesses. Employees also have not signed agreement to report. Policy/forms can be obtained at www.nghd.org.
• Hot water sanitizing machine not reaching minimum required plate temp of 160°F. Use only 3-compartment sink until machine is working properly.
• Final rinse pressure of hot water sanitizing dish machine reading "0" and should be 15-25psi for proper sanitizing. Use only 3-compartment sink until machine is repaired.
• No thermometer (waterproof) available to check final temperature of dish machine. Obtain thermometer for this purpose.
• Newly added food storage room does not have approved, cleanable finishes on walls, ceiling. Finishes must be smooth, non-absorbent, easily cleanable. Room interior was previously the exterior wood finish of building that was enclosed. New storage rack for to-go cups and condiments is against rough concrete (near electrical panels). Relocate shelf to washable wall. Walls in kitchen at dish machine is in disrepair due to heavy use of area. Recommend installing FRP in this area.
• Remarks: Menus have changed, and do not have the correct disclosure; all undercooked items are not asterisked. Items offered less than well done must be asterisked and referenced to a disclosure (i.e. items served less than well) and added to the advisory. Beards longer than a half-inch required beard guard. Submit well water test results.
