Restaurant Scores a 62, Debris on Food Chopper and Improper Holding Temps Among Violations

A look at recent Dacula area restaurant inspections.

  • Violation of Code: [.03(1)(a)-(c) ] person in charge could not answer questions about hot hold temperatures or cook temps. Person in charge must be able to demonstrate knowledge of food safety issues.Β  New Violation.
  • Violation of Code: [.03(5)(c) ] Employee put on gloves then proceded to cut onions. Had employee remove gloves and wash hands. Employees must wash hands prior to donning gloves for food service.Β  Corrected On-Site.Β  New Violation.
  • Violation of Code: [.03(5)(j)1&2 ] Employee drinks in hot hold unit with no straw, non disposable cup on vegetable sink prep table, cup with no lid or straw on prep table by cooler. All cups removed from food prep areas. All employee drinks must be in a disposable cup with a lid and a straw.Β  Corrected On-Site.Β  New Violation.
  • Violation of Code: [.05(7)(a)1 ] Chopper, can opener and small scoop all had dried food debris. Items were put in dishwashing to be cleaned.All food contact surfaces must be kept clean to sight and touch.Β  Corrected On-Site.Β  New Violation.
  • Violation of Code: [.04(6)(f) ] Cheese, sour cream, guacamole and pico were above 41F. All foods were discarded. All potentially cold held foods must be maintained at 41F or below.Β  Corrected On-Site.Β  Repeat Violation.
  • Violation of Code: [.04(6)(f) ] All products on the hot line were below 135F. All foods were discarded. All potentially hazardous hot held foods must be maintained at 135For above.Β  Corrected On-Site.Β  New Violation.
