Easy Recipe For Sweet Potato Pie This Thanksgiving

Nothing compliments a big holiday meal like a warm sweet potato pie. The Thanksgiving table won’t be complete without this rich, melt-on-your tongue dessert.

Here’s a quick recipe for a homemade sweet potato pie that will have all of your friends and family begging you for more.

Ingredients

2 sweet potatoes (I always aim for large)
2 large eggs
1/2 cup evaporated milk
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoons ginger
1 Tablespoon flour

You can make a two-pie crust, or if you’re short on time, the Pillsbury refrigerated two-pie crust is a great alternative.

  1. In a large pot boil water and then add the sweet potatoes. Make sure the water fully covers them. Boil for about 35-40 minutes until soft. Stick with a fork to test the texture.
  2. When the sweet potatoes are done, let them cool down and then carefully remove the skin.
  3. In a mixing bowl, place the sweet potatoes inside and break apart with a fork.
  4. Use a mixer or spoon to mix the sweet potatoes until they’re nice and smooth and creamy.
  5. Add in butter and mix to combine.
  6. Add in the milk, both sugars, eggs, cinnamon, ginger, vanilla, nutmeg and flour. Beat everything together until the mixture is nice and smooth.
  7. Get your prepared pie crust and pour the mixture into the crust.
  8. Bake for 55-60 minutes at 350 degrees. The pie will puff while baking, but will sink later.
  9. Remove from oven and let cool on the counter for 30 minutes. Then put in the refrigerator to set. Three hours.
